It ain’t as hot as the SBS Labor Benchmarks. No sir, no ma’am. Week three recap, let’s do it.

So this week we looked at labor. Labor eats up a majority if not the biggest portion of your expenses — cash going out. We’ve designed our benchmarks to ensure if you follow the range, you will ensure there is some EBITDA, or profit, left over in the business. Okay?

So without further ado, let’s recap the labor benchmarks.

First day we talked about admin. Admin labor: 3-5% of total beer sales.

Day two we talked about outside sales. These are outside sales reps. This is 10% of their wholesale contribution. A rep should cost you 10% of their contribution in wholesale sales. Okay?

Production: 6-8% of total beer sales.

And last but not least — taproom: 8-11% of retail sales.
